为什么气调包装会内凹？
这是一种正常的物理现象并多发于含水量较高的产品中。CO2是气调混合气体中一种基本的化合物，CO2很容易溶解食物所含的水和脂肪中以保证该食物有较低的温度。这就是为什么很多顶空含有CO2的产品会在其内部产生一定的真空度的原因。

为什么使用气调包装的冷鲜肉里会出现水分丧失？
水分丧失发生在肉的处理及加工过程。二氧化碳和氧气被微生物吸收并新陈代谢，从而发生了盒子内局部真空。在冷鲜肉包装中，顶空没有充入足够多的氮气时，真空会压出肉中的水分。这样的结果是肉类水分丧失。可以通过加入一定N2来解决这个问题。
